One of the best things to eat is fish. Most fish is loaded with protein, iron, and even vitamin A and it tastes great. I would recommend getting fresh fish from your local butcher. You can't beat the taste of fresh fish.
When picking out fish, try to buy fish that is U.S. raised. Imported fish, although fresh, has been exposed to air longer and may have a more fishy taste. If you don't see any U.S. raised fish then go for the imported stuff. Again, fresh fish is the best fish.
When shopping for the perfect fish, ask your butcher what the catch of the day is and ask him to let you smell the fish! Yes, I know. I'm telling you to smell before you buy. It sounds weird but it is necessary. If the fish smells fishy then it probably is. You want to get fish with little or NO smell at all!
Many people don't like fish because it tastes "fishy". A friend here in Chicago was such a person, until I invited him over and made some salmon for him. As we were eating he told me that that was the best fish he's ever eaten. "It didn't even taste fishy," he said. That's because it was fresh!
Now, granted, fresh fish maybe a bit more expensive than frozen but it is worth it when it comes to the taste. Here is my low calorie recipe for my kicked up baked salmon.

Keyton' Kicked-Up Baked Salmon
4 Salmon fillets cut about an inch thick
1/4 teaspoon cayenne pepper
1/2 teaspoon Essence of Emeril
2 cloves of garlic
1 tablespoon olive oil
1 tablespoon fresh parsley
The juice of one lemon plus a few lemon wedges for garnish
Salt and pepper to taste
Pre-heat oven to 375 degrees. Season fillets on all sides with cayenne, essence, and salt and pepper. Put fish on baking dish. Finely chop garlic and sprinkle over fish. Drizzle with olive oil. Bake fish for 10-12 minutes or until opaque. Remove from oven and squeeze lemon juice over fish. Garnish with parsley, lemon wedges and serve.
This heart healthy meal is about 185 calories per serving! You can't beat that! I hope you try this recipe and tell me what you think! Enjoy!
